Say NO to GMO...and hello to this! (delicious recipes inside)
Every time I hear the word GMO, I think “OMG” (reference to the Netflix documentary)…is that just me??🤔
Most of us are more than familiar with the GMO term implies by now, but just in case, here’s a quick definition: “A GMO, or genetically modified organism, is a plant, animal, microorganism or other organism whose genetic makeup has been modified in a laboratory using genetic engineering or transgenic technology. This creates combinations of plant, animal, bacterial and virus genes that do not occur in nature or through traditional crossbreeding methods.” -The Non-GMO Project
Does that definition make you nervous? I know it does for me. It has become public knowledge that the safety of GMO ingredients is associated with significant health risk and increased exposure to toxins (for a summary of these risks, click here).
In fact, GMO’s are thought to be so risky that many countries have banned their use, or at the very least required GMO labeling. Not surprisingly, America has been slow to follow, yet thankfully food makers will be required by Federal Law to begin implementing labeling in 2020…hooray! Enter California Lavash…an authentic bakery that believes in eating REAL FOOD, just like I do! They use only simple, wholesome ingredients, and never use anything artificial. Ever. The best part? They use ZERO GMO ingredients in their products and have eared the seal of being “Non-GMO project verified”. This means that I can consume their flatbreads, pita, & naan without fear of exposure to genetically modified ingredients or chemicals that may cause my body harm.
My favorite California Lavash products are their whole grain versions, which are a great source of fiber and are truly delicious!
I used to think flatbread was just for pizza’s or wraps, but boy was I wrong! Since discovering their products, it has become a hobby of mine to discover as many unique methods and recipes to use these breads as I can. Below I will highlight some of my favorites:
Serves 1 (or simply double/triple for more yummy!)
Ingredients:
-1 whole grain Lavash flatbread
-2 free-range eggs, scrambled (preferably organic)
-1/4 cup drained & rinsed canned black beans
-1/4 cup finely diced onion
-A few strips of bell peppers
-1/2 ripe avocado
-Favorite salsa, as desired
-(optional) Sprinkle of organic shredded Mexican cheese blend
Instructions:
Sauté onion & peppers in ~1 tbsp grass-fed butter or oil. Once soft, add in eggs and scramble until cooked through.
Place cooked veggies + eggs in center of flatbread. Top with black beans, sliced avocado, salsa, and cheese (if using). Sprinkle with salt & pepper as desired.
Roll flatbread over ingredients in a burrito fashion. Slice diagonally down the middle and dig in! 😊 Add any additional toppings or dips as desired.
Serves 1-2
Ingredients:
-1 whole grain California Lavash flatbread
-1 can wild-caught tuna, drained
-1 Tbsp grass-fed butter (or oil)
-1/4 cup sundried tomatoes packed in olive oil (not drained)
-1/4 cup canned artichoke hearts, drained & sliced
-Handful of organic spinach
-1/4 -1/2 cup organic shredded mozzarella cheese (or amount as desired)
Instructions:
1. In a small bowl, mix the drained canned tuna with the sundried tomatoes (keep the oil as it will add to the flavor + creaminess) and artichoke hearts. Season with salt & pepper as desired.
2. Melt butter or oil on a griddle or large flat pan on stovetop (or use panini press, if you have one). Add flatbread and begin cooking on medium temperature.
3. Layer ½ of the flatbread with the tuna mixture and top with shredded mozzarella and spinach. Fold other half of flatbread on top to make a sandwich and cook for ~2-3 minutes or until golden brown. Carefully flip over and cook on other side until golden brown.
4. Remove grilled panini and place on plate or cutting board. Slice as desired & enjoy!
Serves 1
Ingredients:
-1 whole grain California Lavash flatbread
-1/4 cup diced cooked chicken breast
-1 small apple, cored and thinly sliced
-1/4-1/2 cup shredded cheese of choice (I used a Mexican blend)
-Handful of organic spinach
-Garlic powder
-1-2 Tbsp Balsamic vinegar
-1 Tbsp grass-fed butter (or oil)
Instructions:
1. Melt butter or oil on griddle or stovetop (or use panini press). Add flatbread and begin cooking over medium heat.
2. Layer ½ of the flatbread with shredded cheese, diced cooked chicken & sliced apple. Sprinkle with garlic powder, salt & pepper as desired.
3. Sprinkle on spinach and then drizzle with balsamic vinegar. Fold other half of flatbread on top, and cook until flatbread sizzles a bit and is golden brown. Carefully flip over and and cook other side until golden brown.
4. Remove from heat, slice as desired & dig in!
