If you have ever found yourself wanting a balanced, healthy, and portable snack option that is perfect for a little bump of energy on those crazy, “grab ‘n go” days, I have got the perfect recipe for you! I personally NEVER leave my house without snacks because hey, I just never know when hunger is going to strike and I like to be prepared! I don’t know about you, but I’m someone who gets “hangry” and no body wants to see that (including myself!), haha. While having pre-packed bars on hand is a fine idea (my personal favorite are KIND bars), I don’t like relying on these all the time and they can also be pricey if eaten often.
So….enter the perfectly balanced, delicious, and healthy snack that you can bring anywhere and will satisfy any hunger pangs! These are naturally vegan, can be easily made gluten free, made with simple real-food ingredients, and are SO GOOD. I personally love to make a big batch of these at once and then freeze a bunch, since they will basically keep forever. Simply keep some in a small bag or container in your bag, purse, or at your desk! They are delicious cold but can be eaten room temperature as well. You’ll want to pin this one for sure!
Now for the recipe…
Time: 10 mins Makes ~12-14 bites
Ingredients:
1/2 cup creamy natural peanut butter (may sub other nut butter per preference)
1/4 cup pure maple syrup
1 1/4 cups rolled oats (certified gluten free if needed)
3 Tbsp ground flax seeds
2 Tbsp chia seeds
1/4 cup dried unsweetened fruit (i.e. dried cranberries, cherries, blueberries, raisins)
Directions:
1. To a large mixing bowl, add peanut butter, maple syrup, rolled oats, flax seed meal, chia seeds, and dried fruit of choice. Mix until well combined. If too dry/crumbly, add a bit more peanut butter or maple syrup. If too wet, add a little bit more oats or flax seed meal.
2. Chill in the refrigerator for ~10 minutes. Then, using your hands or a measuring spoon, scoop out 1 small spoonful and roll into balls.
3. Enjoy! Store leftovers well-sealed in the refrigerator for ~1 week or in the freezer (for basically forever)
